Sourdough discard refers to the portion of sourdough starter that is
removed and discarded during the feeding process. When maintaining a
sourdough starter, you typically remove a portion of the starter
before adding more flour and water to feed it. This removal helps
maintain the balance of the starter and prevents it from becoming too
large.

The discarded portion is often called "discard" because it's
not used in the bread-making process. However, many bakers have found
creative ways to utilize sourdough discard in recipes such as
pancakes, waffles, crackers, and even certain types of cakes and
cookies. It adds flavor and a tangy kick to various baked goods.

During this class you will learn more about Sourdough Discard and
try different discard recipes of all types for a full meal from
appetizer, meal, and dessert.
